Carrot soup

What you need
18 ounces (500 grams) carrots, 2 sweet potatoes, 3 tablespoons oil, 1 onion, 4 1/2 cups (1 liter) chicken stock, 1 teaspoon of Worcestershire sauce, 1/4 teaspoon chopped thyme, 1 bay leaf, 1 cup (225 ml) cream, grated cheddar cheese, 4 slices of bread, butter, pepper
How to do it
1. Peel the potatoes and carrots and cut them into cubes
2. Heat the oil and fry the cut up onion
3. Add the carrots and sweet potatoes to the onion and add the chicken stock, Worcestershire sauce, bay leaf and thyme. Bring to the boil and simmer on a gentle heat until the vegetables are cooked
4. In the meantime heat the butter and fry the slices of bread until they are golden brown
5. Remove the bay leaf and blend the soup. Season with pepper, cream and finely grated cheddar cheese. Serve with a piece of toast
Carrot burger

What you need
18 ounces (500 grams) carrots, 5 dried apricots, 2 spring onions, 1 handful of mint, 1 handful of parsley, 1 tablespoon chopped dill, 2 eggs, 12 Dutch rusks or pieces of zwieback toast, salt and pepper, 4 tablespoons oil or butter
How to do it
1. Cook the carrots and mash with a fork
2. Chop up the apricots and spring onions
3. Crumble the rusks and mix with the eggs. Add the carrots, apricots, spring onions and herbs. Season with salt and pepper and knead for about five minutes
4. Shape the mixture into little balls and then flatten them with your hands
5. Heat the oil or butter in a frying pan and fry the burgers on both sides
Mashed potatoes and carrots

What you need
27 ounces (750 grams) carrots, 27 ounces (750 grams) potatoes, 2 1/4 cups (1/2 liter) milk, 1/2 cup cream, 2 tablespoons butter, bacon, breakfast sausage, nutmeg, pepper, salt
How to do it
1. Peel the carrots and potatoes and cut them into small pieces
2. Put the potatoes, carrots and milk in a saucepan and add water until everything is covered. Cook until the vegetables are ready and drain the vegetables
3. Add the butter and cream to the potatoes and mash. Season with the nutmeg, pepper and salt
4. Fry the bacon and breakfast sausage
5. Mix the bacon into the mashed potatoes and carrots and finish by placing the sausage on top. Serve hot
Carrot cake

What you need
8 ounces (225 grams) grated carrots, grated orange peel and juice from 1 orange, 9 ounces (250 grams) self-raising flour, 3 eggs, 4 ounces (112 grams) butter, 4 ounces (112 grams) brown sugar, 1 teaspoon hazelnut, 1 teaspoon cinnamon, salt
How to do it:
1. Preheat the oven to 350 degrees Fahrenheit (180 degrees Celsius)
2. Beat the butter and sugar until smooth and foamy, then add the eggs one after the other
3. Sift the self-raising flour and mix with the cinnamon and a pinch of salt. At this point you add the carrots, orange juice and egg batter. Finish with some hazelnuts and grated orange peel
4. Butter a cake pan and sprinkle with flour. Spoon the cake batter in the pan and put in the oven for 45 minutes
Carrot chips

What you need
carrots, oil, honey, coarse salt
How to do it
1. Preheat the oven to 390 degrees Fahrenheit (200 degrees Celsius)
2. Peel the carrots and cut into fine slices. Marinate the slices for about half an hour in oil and honey
3. Put in the oven until crispy
4. Sprinkle with coarse sea salt

That carrot burger looks like a great trick to get my youngest to eat vegetables. Only, i couldn’t find those dutch rusks anywhere.. Any idea where to get them in the US ?
